Depends on where you live. Here in central Iowa, we have a large Bosnian immigrant population so a majority of all our foreign students are Bosnian. I would advise you to make an educated decision based on common ethnic groups in places where you'd like to work.

Spanish is a dead give away, I think you should choose it even though you already speak it fluently, the practice is always good. Unless you don't feel like you need the practice, then choose something like German, Chinese, Russian and any other ethnic groups that are commonly in your area.

For beginners who are studying "General English", I usually start with greetings, common phrases, naming things in everyday life and so on. Then move on to topics of interest to them.

You need to find out what interests the student. Maybe it's football or music or business protocol or the world of finance or Megan Fox - whatever they are interested in you teach it!
